I am a Senior Lecturer at the University of Health and Allied Sciences. I hold a PhD in Food and Postharvest Technology from the University of Cape Coast, an MPhil in Food Science and Technology from the Kwame Nkrumah University of Science and Technology and a Postgraduate Certificate in Food Safety and Technology from the Hebrew University of Jerusalem.

My area of research focuses on food safety, postharvest technology, food integrity, risk assessment and the development of functional and nutritionally enhanced food products from underutilized crops. I have an extensive publication record in reputable international journals and I actively contribute to advancing food security, public health nutrition and sustainable food systems in Ghana and beyond.

With over a decade of teaching and research experience, I have supervised numerous undergraduate students and served on several department committees. I am also a Chartered Economist and an editorial board member of ACTA Scientific Veterinary Sciences. My work integrates food science, nutrition and public health to address emerging challenges in food quality, safety and sustainability.
